Lime and Chocolate Frangipane Tarts

Andy: "As a child, I used to visit my nan and I would run to the bowl of sweets and I'd always pick the lime chocolates."
Voice-over: "Andy combined his favourite childhood flavours of lime and chocolate with an almond and pistachio frangipane."
Prue Leith: "Are you baking the frangipan and the pastry together?
Andy: "I'm going to blind bake for ten minutes, then come out, and then frangipane will go in 20 minutes. Maybe 22 minutes. That comes out. A curd should go on top. That goes in the fridge."
"When you're piping like this, you have to be really precise."
"They're definitely wiggly."
Andy: "So my tarts are a pistachio frangipane with a lime curd and a chocolate ganache."
"Lime curd is delicious, isn't it? The pistachio frangipane is delicious. Your pastry bed, it is over baked."
"But I love the flavor, and I could definitely eat a whole one."
