"Ruth is drawing on all her skills for her signature pudding, a take on an old American recipe."


Host: " How'd you make this and what's in it?"


Ruth: "It's like a cake layer. I would say it's more like a buttermilk type sponge but with whipped egg whites in, so it's quite light. That's lovely in itself. But then you add the blueberry and peach jam that they'll knock up and a bit of crispy crumble on the top. You can catch boys with it."



Judges


Mary Berry: "Well, the smells right, we've got the peaches, the blueberries and a sponge mixture around there."


Paul Hollywood: "You've got a good bake on there."


Mary Berry: "I would never have thought peaches with blueberries and they really go well together."


Paul Hollywood: "The flavor of it's fantastic."
