Nicole: "I do a lot of foraging. I tried to not have berries in every bake. I do have berries, but that's just kind of the way it is. Cause that's what I know. That's what I love. That's what I do all day."


Voice-over: "Nicole's nutty shortbread will be sandwiched with raspberry ganache, coated with a pink white chocolate drizzle."




Paul Hollywood: "They're a little bit messy. Pink on the white doesn't really pop. But I love the size of it because these cookie bars tend to be very rich."


Prue Leith: "It's delicious. I really like it." 


Paul Hollywood: "The biscuit's done well. The white chocolate works beautifully because it's so thin and, ironically, because it's so thin, that's why it looks so bad. It's notorious. White chocolate is quite difficult to work with."


Prue Leith: "I think you've done a very good job."
