Danny: "Sea bream fish mousse, a little fines-herbe salad over top, and then there's a little sphere of scotch bonnet and green garlic."


Tom Collichio: "Is this mousse cooked?"


Danny: "The mousse is cooked, yes."


Tom Collichio "How did you cook it?"


Danny: "I steamed it."
