Bailey: "I made risotto for the first challenge and I did end up in the bottom for trying to incorporate too much into it. This time I want to do something that is fairly traditional. I'm going to do a red wine risotto."


Bailey (seeing two of her colleagues make risotto without rice!): "I'm curious if the judges are going to be like, wow, these are incredible, innovative techniques, or are they going to be like, why don't you cook rice?"


Presenting to Judges

Baiey: "Traditional red wine risotto with a little bit of parmigiano and taleggio in the rice, and then a little gremolata on top."


Judge: "Why'd you go in the red wine direction?"


Bailey: "I just think it's very northern Italian"

"Your rice was actually right there. It was al dente, as it should be. However, the wine and taleggio lent a really intense sour note to the dish."


"Some fat to balance the sourness could have helped, but I also think that the rice is cooked beautifully."
