Apple and Blackberry Pie

Gill: "This is the pastry that I've made with my mum for over 50 years. This is proper old school margarine and lard."
Voice-over: "Gill's been making her family favorite apple and blackberry pie every year since she was a child. Today, she's using a rich, short crust to recreate the windy autumn days spent blackberry picking with her Auntie Flo."
"Love the look. I love the color."
"It's absolutely lovely."
"There's a crack there on the side."
Gill: " I know. I tried to move it off the base and I got a little crack. I've sat myself down. I've given myself a good talking to. It's an apple and blackberry pie with a ginger filling inside."
"What's nice is there's still a little bit of bite to the apple. You've got the tartness coming from the BlackBerry as well. And then the note of ginger is grace. It marries everything together."
"Almost unimprovable. Pastry is wonderful. It's just a lovely pie."
"Clever. Well done."
