Bún Thịt Nướng (Vietnamese Grilled Pork and Rice Noodles)

Serving Notes
Diners traditionally mix everything together with the sauces before eating
Adjust chili level in the nước chấm to taste
Fresh herbs are essential - don't skip them!
Ingredients
Instructions
Marinate the Pork (2+ hours ahead)
Combine lemongrass, garlic, shallots, fish sauce, soy sauce, brown sugar, oil, and black pepper in a bowl.
Add pork slices and marinate for at least 2 hours, preferably overnight.
Make Pickled Vegetables
Combine vinegar, water, sugar, and salt in a bowl, stirring until dissolved.
Add julienned daikon and carrots. Let pickle for at least 30 minutes.
Prepare Sauces
Chili Fish Sauce: Whisk together fish sauce, lemon juice, water, and sugar until sugar dissolves. Add minced garlic and chilies.
Garlic Vinaigrette: Combine all ingredients and whisk until emulsified.
Cook Components
Noodles: Cook rice vermicelli according to package directions. Drain, rinse with cold water, and set aside.
Pork: Grill marinated pork over medium-high heat for 3-4 minutes per side until caramelized and cooked through.
Assembly
Divide cooked noodles among 4 bowls.
Top with grilled pork, pickled vegetables, fresh herbs, lettuce, cucumber, and bean sprouts.
Drizzle with garlic vinaigrette.
Serve with chili fish sauce on the side.
Garnish with crushed peanuts and fried shallots.
