Beet and Apple Soup

Cover the beets with water and cook on the 'stew' setting in an Instapot for 3 hours (alternatively, boil in a hot pan until soft). Save the water.
Peel the beets but keep the peel (it's great dried and turned into beet powder).
Heat the olive oil over medium heat. Add the onion, garlic and ginger and sauté gently until soft.
Add the cooked beets, apples, beet cooking water. Cover and cook gently for 20 minutes. Leave to completely cool - the flavor will develop via the chilling process.
Blend until very smooth. If too thick, add more of the beet water and season with salt and pepper, to taste.
