PHASE 2 — ADD THE MIX-INS:

PHASE 3 — SHAPE THE COTTAGE LOAF:
8. Divide the dough. Using a bench scraper or sharp knife, divide the dough into two pieces: roughly two-thirds (about 430 g) for the bottom cob and one-third (about 215 g) for the top cob.
9. Shape the bottom cob. Take the larger piece and tuck the edges underneath to form a smooth, taut ball. Place seam-side down on your prepared baking sheet. Cup your hands around the dough and rotate it on the surface to create tension on the outer skin.
10. Shape the top cob. Repeat with the smaller piece, creating a smooth, tight ball. Place it centered on top of the larger ball. Press down gently so it adheres.
11. Join the two halves. Dust your forefinger and middle finger generously with flour. Press both fingers firmly down through the center of the top ball, all the way through to the bottom of the lower ball. This creates the structural bond that prevents the top from sliding off during proving and baking.
12. Score the dough. Using a bread lame, razor blade, or very sharp knife, make 8 evenly-spaced deep slashes around the bottom cob and 6 around the top cob. Cut at a slight angle, approximately ½ inch (1 cm) deep.
PHASE 4 — SECOND PROVE AND BAKE:
13. Second prove. Loosely cover the shaped loaf with oiled plastic wrap. Let rise for 30-45 minutes until noticeably puffed but not doubled. The dough should spring back slowly when gently poked with a floured finger.
14. Preheat oven to 425°F (220°C) with a rack in the center position. Place an oven-safe dish on the bottom rack for steam.
15. Re-establish the center hole. Just before baking, gently press your floured fingers back through the center hole to ensure it is still open and the halves are securely joined.
16. Optional finishing touches. Lightly brush the loaf with olive oil or melted butter. Sprinkle with a pinch of flaky sea salt.
17. Bake with steam. Place the loaf in the oven and carefully pour about 1 cup of boiling water into the dish on the bottom rack. Bake for 30-35 minutes until deep golden brown.
18. Check for doneness. The loaf should sound hollow when tapped on the bottom. An instant-read thermometer inserted into the center should read 195-205°F (90-96°C).
19. Cool completely. Transfer to a wire cooling rack and resist the urge to slice for at least 30 minutes. Cutting into hot bread releases steam that should stay trapped in the crumb, resulting in a gummy texture.
