What is Matsutake Oil?
Matsutake oil is a vegetable extract of the matsutake mushroom, a mycorrhizal fungus that grows in Asia, Europe, and North America. The name "matsutake" translates to "pine mushroom" in Japanese, where they grow in pine forests. They are a rare, sought-after wild mushroom with a pungent, woodsy, spicy flavor and aroma.
Matsutake mushrooms are often compared to truffles and have flavor notes of cinnamon, pine, and cedar. Matsutake mushrooms are a sought-after wild mushroom that grow in parts of Asia and the western United States from early fall through midwinter. They’re known for their thick, fibrous white flesh.
