What is smoked cod roe emulsion?

To make an emulsion from smoked cod roe, ,ake a cut along the skin of the roe sac and carefully peel the thin membrane away. Discard the skin and any veins. Spoon the roe into a bowl and mash. Add extra light olive oil, a spoonful at a time, mashing until incorporated. Repeat until all the oil is used forming a paste.
