All British bakers have their own preferred mince pie recipes - which is important because no British holiday party is complete without this dish. Both Prue Leith and Paul Hollywood have published their own favourites - this one is mine.

1 batch of pâte sucrée
350 gm mincemeat
Egg wash

Instructions

Roll the pastry (pâte sucrée) out very thinly and stamp out pie bottoms and tops to match your pie tin.

Fill each pie to about half way. The mincemeat will heat and try to push the lid off if the pies are too full.

Add the pastry top, brush with beaten egg

Bake at 400°F for about 20 minutes or until golden.
