Crispy Oysters with Oyster Mayonnaise

Remarkably easy, but a winning dish
Ingredients
2 oz plain flour
1 egg, beaten
4 oz breadcrumbs, (ideally from a focaccia loaf, but Panko will work)
salt and freshly ground black pepper
extra light olive oil, for deep-frying
OYSTER MAYONNAISE
200 ml mayonnaise
3 shucked oysters
Instructions
Prepare the mayonnaise by blending the oysters with the base mayo.
For the fried oysters, place the plain flour in a shallow dish, the beaten egg in another dish and the breadcrumbs in a third. Season the flour to your liking.
Preheat a deep-fryer.
Roll the oysters in the flour, then in beaten egg and finally in breadcrumbs.
Deep-fry the oysters for 1 minute or until golden then drain any excess oil on kitchen paper. Serve with the oyster mayonnaise on the side and lemon wedges.
