Ingredients
Hand-held Peach Pie
2 sheets of puff pastry
2 ripe fresh peaches
2 oz butter
0.5 cups caster sugar
1 egg
2 tablespoons powdered sugar
Lemon and Basil Curd
150 g butter, cubed
2 eggs
100 g caster sugar
1/2 cup freshly squeezed lemon juice
Zest of 1 lemon
2 tbsp chopped fresh basil
Spiced Goat Cheese Cream
1 cup cream
0.5 teaspoons vanilla essence
2 oz goat cheese
0.5 teaspoon sumac
Instructions
Peach Pie
Roll out the pastry and cut into circles of 6" diameter
Dice the peaches and share them over half of each pastry circle
Divide the butter and sugar over the four sets of peach and fold the pastry over the top.
Crimp the edges.
Brush with beaten egg and bake at 400 degrees F for about 20 minutes or until risen and golden brown.
Remove from the oven and top with sifted powdered sugar.
Lemon and Basil Curd
Put the cubed butter into a large bowl.
Put the sugar and eggs into a pan. Whisk together well and then whisk in the lime zest, lime juice, and roughly chopped basil.
Place the saucepan over medium heat, and then whisk constantly about 5 minutes, until it just starts to thicken.
Pour the mixture through a strainer and stir to melt the butter. Whisk together until the butter is completely melted.
Spiced Cream
Put all the ingredients into a mixing bowl and whisk until thick.
Assemble.
