This is tangy, acidic but with enough sweetness for balance. It makes a lovely accompaniment to cheese, fruit, rice ... really anything that needs some added punch. You will need the juice from our pickled onions recipe.

Ingredients

2 cups liquid from pickled onions

3 teaspoons agar-agar

Instructions

Stir the agar-agar into the pickling liquid until it reaches a boil, whisking until the agar crystals disappear.

Boil for at least one minute, then set in a clean tray to set.

Dice to serve. Keep chilled
