Pine Nut and Parmesan Purée

Ingredients
1/3 cup heavy cream
2 oz pine nuts
3 oz parmesan, finely grated
Instructions
1) Heat the cream. Tip in the pine nuts and cook for just 2 - 3 minutes.
2) Put the cream and pine nuts into the blender and blitz until really smooth.
3) Push through a chinois or a fine sieve.
4) Add the grated parmesan and blend again.
5) Pipe (or swipe) onto plates to serve.
