Fresh mushrooms, quick-pickled in a spicy vinegar marinade.
Ingredients
1 tbspn coriander pods
15 g pickled onion powder
1 tbspn black peppercorns
1 pinch Gochugaru chilli flakes
2 dashes Tabasco Sauce
1 minced shallot
2 cups cold water
2 sprigs tarragon
1 cup caster sugar
2 cups red wine vinegar
0.75 cups white wine vinegar
1/4 cup salt
1 tspn cloves
1 Star Anise
Instructions
1) Put all ingredients except shallot into a pan and bring to a boil
2) Set aside to cool
3) Strain the pickle over sliced mushrooms and add diced shallot
4) Leave to soak before serving
