7 g SAF Gold fast-action dried yeast
260 ml whole milk
450 g bread flour
70 g caster sugar
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp salt
1 egg
50 g European butter
100 g raisins
40 g dried cranberries
40 g crystallized ginger
zest of 2 lemons
1 tbsp golden syrup
1 tbsp unsalted European butter
50 g marzipan

Instructions

Warm the milk in a small pan over a low heat until it reaches 110 degrees F, then add one teaspoon of the caster sugar and the dried yeast and leave it for 10 minutes. At that stage, a foam should be visible on the surface.

Place the flour, remaining sugar and spices, salt and activated yeast into the bowl of a stand mixer. Make a small well in the centre and add the beaten egg.

With the mixer on medium speed and using the dough hook, gradually add the softened butter and mix for about 5 minutes, until the dough is smooth and elastic. Add the dried fruit and the lemon zest and mix for a further 3–5 minutes, then turn out the dough into a large oiled bowl and cover with plastic wrap.

Leave the dough to rise somewhere warm for about 1 hour, or until doubled in size.

Once the dough has risen, knock it back. Split it into 12 equal pieces and shape each one. Place the buns on prepared baking trays, spacing them well apart. Cover with oiled plastic wrap and leave to prove in a warm place for a further 45 minutes, or until doubled in size.

When the buns have finished proving, heat the oven to 415°F. To make the crosses, roll out the marzipan, cut into strips and lay over the top of the buns.

Bake the buns in the oven for 18–20 minutes, or until golden brown. Remove from the oven, brush liberally with a mixture of the golden syrup and melted butter, then place on a wire rack to cool before serving.
