Ingredients
3 egg whites
0.5 teaspoons passionfruit extract
200g icing sugar
260g ground almonds
0.5 teaspoons salt
Instructions
Whisk the egg whites to stiff peaks in a clean bowl, then whisk in the passionfruit extract.
Fold in the icing sugar and ground almonds and salt, sifted.
Chill overnight
Cut into small discs, or use a silicon mold and bake at 350°F for 22 minutes.
