"So can you please tell us what you prepared and how this relates to your childhood?"
Kamay: "In front of you we have a crispy chicken thigh with a Haitian red bean sauce, white rice with pickled fresnos, and red onions. When I was growing up, my mother would just fry the chicken instead of the traditional stewing, and I've elevated it now with the topping and the rice flour in the coating of the chicken."
"Kamay, it looks delicious. Really delicious. And the crispness of the chicken is second to none."

"You've done wonders with the sauce and the refinement of those beans. Definitely is elevated."
"I just love the fact that you were so bold with that seasoning on the chicken, but maybe could you have done something more with the rice instead of just a plain rice?"
