Ingredients
3 tablespoons kimchi
juice of 1 lemon
2 tablespoons mayonnaise
1 tablespoon feta cheese or Cotija (Cojita) cheese
2 tablespoons pineapple juice (or crushed, canned pineapple)
1 teaspoon hot chili sauce
Instructions
Blend everything together. The feta can leave a slightly gritty texture, so push through a very fine chinois or through a sieve lined with a coffee filter, or with cheesecloth.
If you like a thicker emulsion, reduce it over low heat.
