The Perfect Yorkshire Pudding

This is a batter, cooked in hot, hot oil to puff up and creating the perfect hollow into which you can put (as here) mushrooms or bacon ... or roast beef ... or, trust me, salted caramel sauce and pouring cream!
Ingredients
150g all-purpose flour
1 teaspoon salt
4 eggs
200 ml skimmed milk
Crisco for cooking
Instructions
Preheat the oven to 400°F
Mix all the ingredients (not the Crisco!) in a blender and - this is important - leave to rest for at least 30 minutes. Don't rewhisk before cooking.
Put a teaspoon of vegetable Crisco into each compartment of a tray (typically, a muffin tray) and put into the oven.
When the fat is smoking hot, pour in the batter, not wasting a single minute or the oil will start to cool. Return to oven.
This, too, is important. Don't open the oven door until they are risen and golden brown. Typically, that's about 25 - 30 minutes, depending upon the size of your pan.
