Afternoon Tea Display
Alison Hammond: "Now, Prue would love you to make a stunning afternoon tea display.
Noel Fielding: "Your afternoon tea should consist of four individual lemon sandwich cakes, four strawberry tarts and four plaited egg and cress rolls. You've got three hours for this."
Paul Hollywood, chatting with Prue Leith: "Now, I think you've chosen three classics. You've got a beautiful egg roll. You have strawberry tarts, and then you have the lemon sponge."
Prue Leith: "All the bakers will know how to make bread and pastry ... and cake. So this is really a challenge about organization. Obviously, we have to start at the bottom. We have to start with the sandwiches first. So we are covering some of the things we've already covered on the Bake Off this year, like the plaiting. They can overwork the dough. And they've got to make an egg mayonnaise filling. For the strawberry tarts the pastry should taste beautiful, delicate and crumbly, but they can overwork it. They have to get it nice and thin. Finally, this little lemon sponge is fantastic. It looks beautiful. It's a buttery, moist sponge. There's baking powder in there, so they need to be careful not to use too much, otherwise it will rise like a souffle and sink. It's a difficult challenge simply because there's so much to do and we need to see every element perfectly executed."
