Challenge - make a malt loaf and home-made butter to serve with it.


Prue Leith: "It's possible to undermix this dish and leave lumps of flour visible. Equally, overmixing will strengthen the gluten and lead to a tough, chewy loaf. Undercooking will mean that the loaf sinks in the middle and overbaking will make it dry!"


The recipe includes prunes which need to be chopped really small to prevent them from sinking to the bottom. An even distribution of the fruits is part of the magic.
