Perfectly baked Galette des Rois
Galette des rois is a French puff pastry cake that is traditionally eaten in France on January 6th (Epiphany) to celebrate the arrival of the Three Wise Men in Bethlehem. The cake is usually filled with frangipane, a cream made from almonds, butter, eggs, and sugar, and contains a small charm, or fève, hidden inside. After cutting, whoever gets the fève wins a prize or gets to wear the crown, since they are king or queen for the day.
The judges were looking for a smooth almond frangipane, encased by a flaky puff pastry, scalloped at the edges and highly decorated.

Paul Hollywood: "Nice height to this. Nice design and an attempt to scallop the edge. Pastry is flaky and crispy and buttery. The almond flavor is coming through beautifully.

Paul Hollywood: "Oh, this one has a crown. Interesting. Quirky. It feels a little bit heavy on the knife when cutting. It's lost a bit of butter and lost the full rise. "

Prue Leith: "This is the neatest one we've seen. It looks a little smaller than the others. The pastry is crisp and buttery and the frangipane is lovely and almondy. It's just not quite as high as it should be."
