Andi Oliver (speaking to the camera): "Adam's aiming for maximum crispiness with a garnish of fried garlic, ginger and shallots with dehydrated cauliflower."


Later, Andi Oliver, still speaking to camera: "Adam's creating a saffron tofu mousse."


Chef Adam: "It's got some roast garlic oil through that, the saffron, some lime juice through there as well, just to give it a little bit of acidity, but it's about being rich."


Aktar Islam, speaking behind the scenes: "Adam's tofu cream? Really nice texture. Lovely roast garlic flavor coming through. But seasoning is a concern for me. I just think it's a bit under-seasoned."


Andi Oliver, narrating Adam's plating: "After seasoning his crispy garnish, Adam starts layering his egg with whipped saffron tofu, then tikka cauliflower. roasted in garlic oil with pomegranate seeds.The yolk of egg and fermented mango chutney is covered with more cauliflower espuma, lime zest, and micro coriander."

Judge asks Chef some key questions about the finished dish

Aktar Islam: "Let's talk about the tofu. Has that delivered what you wanted?


Adam: "Yeah, I just think it gives it a nice base."


Aktar Islam: "Tikka Cauliflower. Are you happy with that?"


Adam: "I worked really hard on it. All the spices were toasted off and ground down myself.


(Behind the scenes, fellow chefs are critiquing the dish)

"I really like the spice. You get a really nice, gentle heat at the back of your mouth" 


Aktar Islam: "And then you've got your crispy textures on top. Some chaat spiced cauliflower running through that as well?"


Chef Adam: "I don't know if I put it in, to be honest."


Aktar Islam: "And do you think there's a clear distinction between all the different layers as well?"


"Yeah, I think so."


Andi Oliver, behind the scenes: "Some of the layers are hard to discern because the seasonings a bit off."


Summary


Aktar Islam: "So, Adam, for your dish, "egg and spoon race". The tikka spiced cauliflower. I think the spice mix, the ratio needs to be looked at. The crispy elements individually, they were great, but the bit that I really missed was the chaat masala spiced cauliflower. It's a shame you missed that off. I think every layer has to be seasoned and if seasoning is lacking on any layer, it will be picked up on.
