"Winner's Medal"

Andi Oliver (during prep): "Now for the puree that he'll shape into a gold medal. Cal's cooking artichoke in oat milk. He'll also be barbecuing some more artichokes."
Andi Oliver (later): "Artichokes drained, Cal creates a puree, fills metal molds, and freezes."
During plating ...
Chef Cal: "I'm putting barbecued artichoke, chopped up, seasoned, into a bowl. Some pickled wild garlic capers through there."
Andi Oliver: "Next, partly frozen medals of artichoke puree."
Chef Cal: "They'll just defrost in the warm bowl now. And then we'll get the gold leaf over the top."
Andi Oliver: "Finally, Cal's gold medal, broth, bread (stamped with Olympic logo) and seaweed butter, is served."
The concept is that when the broth is poured over the gold medal, the gold leaf melts.
Judge asks Chef some key questions about the finished dish
Aktar Islam: "As soon as you pour the hot broth onto it almost disintegrates. Is that the plan?"
Chef Cal: "Yeah. When I got, like, first spoon in there, it's like, you know, it all combines as one and yeah, delicious, I think.

I love having the bit of bread and butter on the side to mop it up with. And that's delicious for vegan butter.
Aktar Islam: "So, broth?"
Chef Cal: "The broth is, for me, my favorite bit."

It's really intense, so get that sort of flavor from just a vegetable. It's really impressive.
I think as a vegan starter, I'd be super happy.
Summary
Aktar Islam: "Cal, for your dish "winner's medal". I thought the way the ribbon was presented on the bowl, then that leading onto the gold medal, that's a really clever way you've put this dish together. Absolutely love that broth. I'm going to use the term meaty for a vegan element. You know, I thought you did incredibly well to get the amount of flavour that you've packed into that. The Jerusalem artichoke, the little pieces are just too small, too fine. It'd lovely to see to get some big chunks on there. The gold leaf process is an issue here. You know, you're really struggling with it. How about you do it when the medal is still frozen? You just drop it on and leave it. You don't have to mess around with it last minute."
