Daniel: "Yeah. I've got the neck fillets, I've got the loins. I'm also doing a little crispy rib to go with it as well. The rib is being pressure cooked and then deep fried. The leeks are going to be brined and roasted. There's going to be a leek puree and some pickled leeks as well."
