Lewis: "My main course is sirloin and I brine that in milk powder. It gets a really nice caramelization. We've got some lovely cheeks for an ox cheek pie. I'm going make a hot crust pastry with beef fat. And then I'm going to keep the pie open. I'm going to make a crumble top with blue cheese and crispy onions. For the potatoes I'm going to do beef fat chips. Nice and simple."
