Which Show?
Who made this dish?
A toast to Rhoda's mother. While shopping: "My second course is a toast to my mother. She'd make me lugaw, which is a Filipino porridge, but I'm making this with abalone. It's super comforting and it transports you back to being cared for."
At service: "This dish is a toast to my mom. Every time we're not feeling well, she would make this porridge for me. So this is abalone and rice with abalone liver mousse."
Final table: "It's my version of my mom's porridge. I made it with abalone."
{Judge}: "The flavors in this dish were really great."
{Judge}: "The abalone was totally beautiful and such a great textural component."
{Guest}: "I love abalone. I don't usually like abalone liver sauces, they can have a very off flavor. And this one was actually really delicious."
Final table: {Guest}: "That abalone, texturally, you really nailed that. That liver sauce really added a really nice funk."
{Judge}: "Abalone is a tough ingredient to work with. It was just beautifully braised. Just tons and tons of flavor."
In deliberation: among her exceptional first two courses; "the braising liquid from the abalone is just a big flavor bomb."
