Almond and Rosemary Tart with Sherry Fig Compote, Manchego and Sherry Cream 


Frankie's quarter-final dessert, inspired by a Cornish tapas dish: an almond and rosemary shortcrust tart filled with a sherry fig compote and Manchego, with sherry cream and flaked almonds. A daring sweet-savoury 'cheese-board' dessert that divided the room.

Guest judge: "That shortcrust pastry is bang on - cooked all the way through, a right texture, a wonderful jammy fig compote. But then there's Manchego, and that has thrown it off for me." 


Guest judge: "I love the way her mind works. However, it is a little too confused for me." 


Judge: "I love the Manchego custard, I love the fig jam; with the rosemary in the pastry it's really delightful." 


Judge: "It's really brave, really interesting." [Advanced to the quarter-final.]
