Almond frangipane tarts with raspberry jam. His pastry came out too soon and was too soft, and he had to blind bake to make time up.
Gary: "I took my pastry out too soon and it's too soft. Look, time's gonna be the issue."
Gary: "Right. Blind baking now. We got to make some time up. Moving on to the frangipane."
Gary: "Making a raspberry jam. So two spoons in each. I've just got to get them finished."
Gary: "Get a tart on."
[Showstopper: a retro dessert trolley of at least three individually portioned desserts, eight of each, with at least one baked element. 4 hours 30 minutes.]
Paul: "The almond tarts, frangipane flavor, I really like. The jam's too thick."
Nigella: "The raspberries have wept into the pastry base and they've made it claggy underneath."
