Andy's meringue roulade with lemon curd and raspberry coulis. He had never made lemon curd before in his life and never thought he would. His main concern was not letting the curd scramble. The judges noted the curd looked thin but felt confident it would settle once chilled. He worked the timing carefully so the curd was cool before being added to the roulade.
Anna: the meringue is beautifully light and fluffy; she loves the lemon curd, very creamy, which she likes, and the coulis is good too.
John: a lovely balance of crispiness to softness in the meringue, very good.
Andy wins one of the two remaining aprons - the judges call his roulade excellent.
