James plays double bass in a band with his sister. He is the only baker attempting full puff pastry, adding the butter as one flattened piece. James: "Doing it this quickly is hard." James: "To be quite honest, I've got no idea what rough puff pastry is or how to make it, so this is the only sort I knew." His apple and lavender tatin is a personal favourite. James: "[I'm] actually putting some dried lavender in with the caramel, and it works." James: "This is actually the only tarte Tatin I've ever made and the only one I've ever tasted." At turnout: James: "Oh, certain disaster."
Before baking: Mary: "You leave the little bits of lavender in it. Nice. It'll be interesting to see." After tasting: Mary: "Got a bit of colour on the bottom there, which is good. The fruit is cooked." Paul: "The texture of the apple is lovely, the flavour combination is good." Mary: "I like the lavender, and I think you have really conquered that." (Host: "There's always a slight worry with lavender, but that is just delightful.")
