John found baking a way to bond with his mum after his parents divorced 16 years ago, and was last week's Star Baker. He is repeating an apple and vanilla tatin topped with walnut praline. On his caramel: John: "I've got apple juice and cinnamon [so] I can't quite gauge the amber tones because it was already fairly brown." On the Star Baker title: John: "It's nice to have that accolade for one week, but it doesn't really mean anything in the grand scheme of things. Everything's set to zero today." At turnout: John: "Moment of truth now."
Mary: "From here you've got a nice soft fruit. And how about that, lovely crisp underneath." Paul: "It bakes good. I think the flavours all together are fantastic."
