Full name: Apple, Cinnamon and Raisin Self-Saucing Puddings
Last to start. Inspired by Austrian apple strudel, a childhood favorite: diced apples, currants and sultanas in an apple sauce thickened with apple juice and cornflour, topped with cinnamon sponge. Served generously in large ramekins.
Yannis: "I was waiting and waiting for a really long time. I'm just trying to crack on with it, really."
Yannis: "No, I don't feel the pressure. You do your best and that's it."
Yannis: "It's inspired by apple strudel, that is very famous in Austria. It's warm, it's hearty, it is just a divine group of flavors."
Yannis: "It's not easy. It did take me a few experiments to get it right."
Yannis: "When your cake bakes, it rises, the sauce drops down, it forms that pool at the bottom. I'm going to get a bit of this apple juice and, to thicken that up, a bit of cornflour."
Yannis: "Gosh, I feel like I'm over serving now with my ramekins."
Yannis: "So it's an apple, cinnamon and raisin self-saucing pudding."
Yannis: "Mine were quite generous. I'm a generous person. I just want to feed people."
Nigella: "Well, you always make everything look beautiful. Okay, I'm diving in."
Nigella: "There's something slightly gummy in the sauce."
Paul: "It's too big. And that altered the bake. If it was smaller, it would have been better."
