A small savoury pastry case (described as a stout crust) filled with a smooth Lancashire cheese custard made with Mrs Kirkham's cheese, eggs, and melted brown butter. Topped with a silky Jerusalem artichoke and miso puree, finished with a shaving of black truffle. The combination of rich custard, earthy artichoke, umami miso, and fragrant truffle creates a complex, savoury bite.
Lisa Goodwin-Allen ranked this 2nd in the canape round. Lisa said: "It was a tasty bite, but it was very big, you know, and it was quite fiddly to eat." While the flavour was praised, the portion size was too large for a canape and it was not easy to eat in one mouthful, which is the expectation of this course.
