Voice-over: "Judges, before you, you will find a roasted red pepper glazed pork tenderloin. It is accompanied by glazed sugar snap peas and a waffled shiitake mushroom."


We learned during the cooking that Darnell used a run on his pork tenderloin of 5-spice powder, ginger and garlic. Also that his peas were dressed with Garlic and Fresno Chilli Relish. The glaze was made from apple cider vinear, sugar and red bell pepper, blitzed.



"The glaze is sweet. It's sticky. There's some spice to it, so it's pleasant for sure. The flavors, the combination, all work well. I like pork cooked pink. I don't know that this has rested the right amount of time. This is quite raw in the center and then a little gray on the outside."


"The shiitake waffle iron, that method I've never seen before."

 

"The shiitake really adds flavor because it's liquid and there's no real sauce. It's just a glaze. Right. And the peas and the mushroom make it a fresher dish."


"If I was given the challenge of the waffle iron, I don't think I would have been as clever as using it with the mushroom."
