Aubergine and Labneh Potato Cylinder

Vince: 'I'm doing the [aubergine]. Just going to let that slowly smoke. And then I'm going to start on the potato cylinders.'
Thin ribbons of potato are wrapped in a spiral around a cylindrical metal mould, brushed with butter, and baked until golden and crisp.
Vince: 'It's like a massive hula hoop.'
Vince: 'So we've got a smoked aubergine tapenade, pickled apricot ketchup, coconut labneh wrapped in a potato cylinder.' The crisp open cylinder is filled with a glossy smoked aubergine tapenade, finished with a small dot of pickled apricot puree and a small quenelle of coconut labneh.
Episode tasting (Aktar Islam, veteran): ranked this second-to-last of the four canapes, saying the textures were wrong and the flavours came through as muted.
Peer chefs were kinder: Abbie praised the apricot gel, and fellow chefs called it nice and fresh and delicious. Vince did not progress to the finals day, so no further judge commentary exists for this canape.
