Bajan Black Cake with Rum Caramel, Vanilla Bean Whipped Cream and Chocolate Ganache
{Britny}: "I'm making a Bajan black cake with a rum caramel and a vanilla whipped cream. I remember making this as a kid but not being able to eat it because of the alcohol. I'm cutting the rum down to make it not so boozy."
(Her brown sugar caramel burned and she restarted it.)
{Britny}: "I usually add the rum to the cake, I just didn't want it too rummy for you guys."
Bottom three (Americas), ELIMINATED.
{Judge}: "This cake seemed like it had some technical flaws."
{Judge}: "The first thing you get should be that fragrance of rum, and I'm not getting that hit. It's dry."
{Judge}: "It needs that punch of rum to cut the dense heaviness of the macerated fruit. It's a cake you want to get drunk on, and there's no way."
{Judge}: "Molasses is the dominant flavor, that's all I taste. I'd love some rum for a bit of acidity. Quite frankly, you played it all wrong." In deliberation: "Could you taste any rum? No. She could have taken that cake and elevated it."
