A baked donut topped with caramelised pineapple spiced with scotch bonnet, tamarind and lime, on ginger custard with a pistachio crumb.
Maria is an advertising executive and mum of two. She grew up in a family of food lovers in West London and still shares recipes with her older sisters.
Maria: "It's a mix between my two sisters' favourite desserts. One sister loves my pineapple cake. The other loves donuts. So I'm mashing them together to make a baked donut with grilled pineapple marinated in lime and chili with a ginger custard."
Anna: "When you hear donut, your expectation is that it's deep fried, but this is a baked donut and it's more similar to a cake. So you need to be careful because it has to be soft. You don't want a crunchy bite donut."
Anna: "This baked donut feels a bit heavy. It's a little bit dry, but your pineapple has got loads of flavour in it. There's kick from the scotch bonnet. The custard is really delicious. There's nice, elegant notes of ginger off it."
Grace: "The main event here is perhaps letting it down. This would definitely have benefited from having a big, fat, deep-fried donut."
