Brandon, a self-described banana pudding devotee with a culinary school background in international baking and pastry, fused his two favourite desserts into one. Layers of roasted banana plus fresh banana compote sit at the base, topped with a traditional sabayon, vanilla wafers dipped in espresso syrup, and a finishing dab of whipped cream.
{Brandon}: "My favorite dessert on the planet is banana pudding. My second favorite is tiramisu. What I wanted to do today was combine the both." He roasted the bananas with skin on to extract a deeper banana liqueur flavour. Twin brother Jonathan was competing in the same challenge with a chocolate chess pie.
{Judge}: "What about Brandon’s? It’s very good. There’s the right amount of cake to banana to cream."
{Judge}: "Even though it was the last, and I don’t know if I could have put another bite in my mouth. I wanted to eat more. It was really tasty."
{Judge}: "This is really good."
{Judge}: "Loved it with that banana pudding."
