Beef Tartar with Hash Brown, Oscietra Caviar, and Oxalis


A refined one-bite canape featuring a miniature crisp hash brown (potato rosti) topped with hand-cut Dexter beef fillet tartar, a spoonful of oscietra caviar, and fresh oxalis leaves. The Dexter beef is a heritage British breed known for its deep flavour. The combination of the warm crisp potato, cool raw beef, salty caviar pop, and sharp oxalis creates a luxurious but perfectly balanced single bite.

Lisa Goodwin-Allen ranked this 1st in the canape round. Lisa said: "It was everything that a snack should be. One bite packed full of flavour, nice and light. It was delicious." Paul's canape was praised for being the best balance of flavour, texture, and portion size. It delivered maximum impact in a single mouthful. 


FINALS JUDGING -- Changes: Beef fillet aged 52 days for the tartar. Pre-seasoned the tartar mix ahead of service. Fresh sour cream dressing. 


Tom: "I like that. Maybe a touch over seasoned." 


"Bit salty, but it was soft in the middle, crispy on the outside. The caviar comes through." 


Lorna: "Bit high [on seasoning], I would say for sure." 


Phil: "Getting a bit salty." 


Debbie: "I think I could have done without the caviar, actually. I think it would have been nicer." 


RESULT: Unanimous win for Paul's canape.
