IPA Croustade with Caramelized Onions, Beef Tartare and Bearnaise. 


An IPA beer croustade (crispy pastry shell) filled with caramelized onions and topped with aged beef tartare and bearnaise sauce. Orry was focused and efficient in his preparation, moving quickly through his components. The croustade provided a crispy base for the rich steak tartare and classic bearnaise combination.

Adam Handling ranked Orry's canape 2nd out of four. 


Adam said he loved the fact it was crispy on the outside and had that steak and bearnaise kind of flavors, describing it as wonderful. The other chefs found the texture and flavors appealing, with Jun noting it was fun.
