Beer batter Croustade

Andi Oliver (during prep): "I see Scott is making pastry for his canapé."
Chef Scott: "This is going to be a beer batter croustade, and then I've filled it with a duck heart offal ragu."
Chef Scott (presenting to judges):"This is a beer batter croustade. It's been filled with a duck heart ragu. We've then got fermented carrot, pickled peppercorns, some garlic capers, finished with horseradish, creme fraiche, and a pickled carrot roll on the top."
Aktar Islam (Judge): "For me, there was a clear winner, and that was Scott's croustade. You want something that hits you with flavour and then cleanses the palate on the way out, and that's exactly what it did."
