Beer-battered aubergine with satay sauce, whipped feta, pomegranate and coriander oil, served with flatbreads.
Alexia is a 32-year-old travel consultant who has been to over 70 countries. She is Greek Cypriot by heritage and loves wandering through Asia.
Alexia: "I'll always put a bit of a twist on things. Beer-battered aubergine, which is going to have a sauce, on a bed of whipped feta and some flatbreads. I am Greek Cypriot by heritage, but I absolutely love wandering to all parts of Asia. It's a bit of a blend of the two places that mean the most to me."
Grace: "Satay sauce, whipped feta. These are two things that are very rarely on the same menu. I can almost hear stamps going on my passport as I'm eating this."
Anna: "Your satay sauce — you can get galangal, ginger, coconut, and the peanut. It's got loads of personality, but the feta has a far too strong flavour. It's overpowering. Your satay sauce, I feel that they could have been two different dishes." Grace: "The aubergine and the batter with satay is inspired, but the flatbreads for me are a little stodgy." Alexia did not win an apron in this round.
