Beer-poached Shrimp with Beer and Chipotle Sauce and Beer-infused Jasmine Rice


"So, this is a beer poached shrimp with a beer chipotle sauce and blue moon light infused jasmine rice."



"I love the idea about the poaching of the shrimp in the beer, but they do look a little bit undercooked. Right. Let's get in there, shall we? Okay, cut through. And did you test them when they came out?"


Daniela: "I did not check, no."


"And you can see they're slightly under there?"


"So, Daniela, shrimp are 30 seconds away from being cooked correctly, but there's actually quite a nice sort of smokiness from that chipotle sauce. I actually quite like that. And then the rice just needs lifting because it's just a little bit bland."


"Yeah. That beer flavor does really come through on that shrimp, which I can definitely appreciate. But that sauce might have been reduced a little too far. That salinity is a touch high on this one."


"This dish lacks the gravitas, the thought, the cooking that goes behind a winning dish."
