Cesar: "For the beet dish, I'm making a tostada. There's a restaurant in Mexico City that made a tuna tostada that became very famous. So I was like, why not make that with beets?"

Cesar: " I made a beet tostada with charred grilled beets, a little bit of chipotle mayo, and a salsa verde.
Judge: "This one's got a kick."

"Cesar, I really enjoyed your dish. I found the tostada to be on the greasier side, and the beet for me was getting lost. If that beet had been just a little bit thicker, I think it would a near home run for me."
