Beetroot Rose, Smoked Apple Butter

A plant based starter built around a beetroot rose. The beetroot is cooked and cooled in beetroot juice, cumin and mace, then assembled into rose shaped petals with blackcurrant pickle juice. Served with a vegan brioche coloured red with beetroot, a smoked apple and salsify butter, a forest floor crumb of black olive, panko and thyme finished with raspberry vinegar, and deep fried salsify to resemble thorns.
Marion: "I'll have a vegan brioche. And I'll have a smoked salsify and apple butter."
Marion: "I have some black olives, some panko bread as well, thyme, so I can have a nice crispy black floor for the forest."
Marion: "I like to have some uneven petals at the end. They look like prizes."
Marion: "Then I'll finish with some raspberry vinegar. It will cut through the earthiness. So I'm just going to put some salsify thorn all around the plate."

Sally Abbe: "The rose looked really sharp. The beetroot did have really good texture, but I didn't really get the spices coming through. The brioche was lovely and soft, but it lacked basic seasoning. The crumb tasted really nice, but I did think there was too much of it. Overall, the dish was a bit too dry. It really needed a sauce or something wet to bring the whole thing together."
Sally Abbe: "Everything was just way too dry on the palate. It is crying out for a sauce, that dish."
