Nataliia: "This is my chocolate mousse cup with the chocolate sponge and also with the berries compote." During preparation Nataliia made her jam in a Ukrainian style. This challenge offered her the chance to revisit her fruit filled childhood. Nataliia: "My brother and I we're picking the berries in a gardens of my grandma. Take it back to Granny's." Her set berry compote was infused with almond liqueur and sat between layers of genoise sponge and dark chocolate mousse. Nataliia: "More amaretto. Let's make it strong. Perfecto."
